The Château Chalon wines of Caves Jean Bourdy.
Caves Bourdy are the oldest producer in the region, with a direct
family line going back to the 16th century. Their cellars contain
the oldest collection of vintage Château Chalon and Cotes du
Jura in existence, with some wines going back to the 19th and
even 18th century.

We  work exclusively with Jean-Francois Bourdy to
occasionally make limited numbers of these irreplaceable old
vintages available to discerning collectors. All wines come
direct from Bourdy's cellar to our own, and so are in perfect
mint condition.

The Cotes du Jura Rouge wines of Caves Jean Bourdy.
The Cotes du Jura Rouge wines from Caves Bourdy are as remarkable as the whites, and although perhaps not quite as long-lived as the
greatest Vin Jaune, will nonetheless age for many decades. The cepage is a mixture of the three red varieties of the appellation: Poulsard,
Troussard and Pinot Noir.  When young it's their crisp acidity one notices, over time this mellows, and older examples are tremendously
complex, with the Pinot Noir often coming to the fore, especially on the nose.

The Cotes du Jura Blanc wines of Caves Jean Bourdy.
Caves Bourdy are as proud of their Cotes du Jura Blanc as they are of their Vin Jaune, and no wonder: few wines so perfectly illustrate the
profound importance of terroir. Made exclusively from Chardonnnay, from vineyards less than 60km from the heart of Burgundy, one might
expect them to taste like white Burgundy, and yet they are utterly different, minerality and spice are to the fore rather than fruit, and whereas
most white Burgundy is over-the-hill at 20 years old, these wines are just coming into their own, and in good vintages will age for a century.

The Vin de Paille wines of Caves Jean Bourdy.
These are the precious dessert wines of the Jura, made from Savignin, Chardonnay and sometimes also the pale red Poulsard (which gives
the resultant wine an unusual coppery hue). Grapes for Vin de Paille are picked early and then dried usually in an attic area, either in small
boxes, or suspended from the rafters. Once the requisite sugar has been achieved, they are pressed, fermented and aged in barrel. The Vine
de Paille wines from Bourdy have haunting honeyed flavours with delicious, candied exotic fruits and excellent balancing acidity.
